Locally foraged Oregon spring nettles, one of our favorite greens for flavor, have verified amazing healthy benefits (See Stinging nettle Information | Mount Sinai - New York).  Barley is also recognized as one of the most nutritious grains.  We combine the two into something memorably tasty in this risotto, made by pureing nettles with goat cheese, pecorino cheese, and other delicious ingredients into a sauce added into barley cooked risotto style with vegtable stock and white wine.  Just requires heating and topping with the included truffled pecorino cheese. 

 

Add a poached or fried egg for even more protein or choose to include either our wildmushroom brined deboned half chicken half (2lbs of meat) or two 8oz Chilean seabass fish filets (either work beautifully on top of a bowl of risotto.

 

The versatile creamy pistachio vinaigrette, our most popular salad kit, is packed with spring flavors and works fantastic on a simple crispy lettuce salad or mixed with roasted beats, squash or other root vegtables.  Add 6 minute bioled eggs to salad or roasted beets for even more delicious protein in the meal.
