Revel Meat (found in Providore), one of the smallest USDA butchers on the west coast, processes some of the best meat anywhere and the pork loins from Reiben Farms in Banks, Oregon, are our favorites. We brine the thick-cut loin chops with a bit of maple syrup and armoatics for a tinge of sweetness but bold maple flavors that pair great with the other dishes in this meal: tangy braised red cabbe with bacon and apples and cannellini beans braised in wild mushroom broth and armoatics. Top the chops with the charred apple and sage "butter" (no dairy).
