Feeding a smaller group or don't want the 3-4 hour cook time for a Turkey?  These organic chicken "roulade" give all of the vibes of a Thanksgiving feast and then some.  Organic skin on chicken breast brined in apple cider wrapped in a chicken sausage made from chicken dark meat, chanterelle mushrooms, onions, garlic and herbs and then all wrapped in caulfat.  Quick sear and roast in the oven on a bed of thyme for 35-45 minutes.  The pan jus makes an extreordinary sauce, with hits of apple, chanterelle and all of the flavors in the chicken.  A crowd pleaser that also makes a delicioius lunch served cold.
