Bronzino, the light and buttery Mediterranean favorite, gets topped with a flavor packed Italian salsa verde with green olives, basil, tarregon, and just enough achovies to add umami.  The braised buttery giant (gigante) white beans with a creamy but vegan base made of pureed parsnips and celery makes a satisfying and delicious base that goes great with the salsa verde too and could be a meal on its own.  Served with an aged sherry vinegar and shallot dressing for a simple but bright side salad.

 

Available with either 2 or 4 5-6 oz branzino filets and enough beans and dressing to serve 4.
